Basic Breakfast Casserole

Ingredients

  • 10 eggs
  • 1-2 tsp Spike Seasoning
  • 1-2 Tbsp green onions, sliced
  • 1 cup meat of choice, precooked
  • 1 cup lowfat cheese, grated
  • 4 ounce cottage cheese, rinsed
  • 8 ounces vegetables, chopped, sauteed

Instructions

  1. Preheat oven to 375.
  2. Spray 7x11 or 8x8 glass or non-stick metal casserole dish with nonstick spray.
  3. Dice meat.
  4. Grate cheese.
  5. Saute vegetables in small amount of olive oil for 3-5 minutes. Or boil and drain harder vegetables such as broccoli.
  6. Mix eggs, spike seasoning, salt and pepper, and cottage cheese.
  7. Layer meat
  8. veggies
  9. green onions
  10. cheese
  11. Pour eggs over and stir gently with a fork to distribute ingredients evenly.
  12. Bake until eggs are firmly set and top is lightly browned. 20-25 minutes for 7X11 or 8x8 pan.
  13. Can make ahead and keep in fridge. Reheats well.
