Backyard Breakfast Egg Salad
Ingredients
- 6 large eggs, hard-cooked
- 2 tablespoons full-fat mayonnaise
- 2 tablespoons plain 2% Greek yogurt
- 2 teaspoons Dijon mustard
- 4 slices cooked bacon, crumbled
- 3 tablespoons finely chopped red onions
- 1 tablespoon finely chopped fresh chives (or any herbs you like, I used dill)
- 1/4 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 4 pieces 100% whole-grain bread, toasted
Instructions
- 1. Chop the eggs.
- 2. Combine the mayonnaise, yogurt, mustard, bacon, red onion, chives, salt, and pepper. Gently stir in the eggs.
- 3. Spread on toast and serve.
