Breakfast Casserole

Ingredients

  • 2 pounds Pork Sausage
  • 1 package Center-cut bacon
  • 5 each Potatoes
  • 6 each Eggs
  • 1 tablespoon Lard
  • 1/2 cup Flour
  • 2 tablespoons Butter
  • 4 cups Milk
  • 6 1/2 ounces Fresh mozzarella cheese
  • 8 ounces Sharp Cheddar cheese
  • 8 ounces White Cheddar cheese
  • 1/2 cup Parmesan cheese
  • 1/4 cup Fresh parsley
  • 1 teaspoon Onion powder
  • 1 teaspoon Garlic powder
  • 1/4 teaspoon Freshly ground pepper
  • 1/2 teaspoon Nutmeg
  • 2 cups White wine

Instructions

  1. PREP
  2. Combine spices in a bowl, set aside
  3. Combine chedder and white cheeses in a bowl, set aside
  4. Set aside morzzela in a bowl
  5. Preheat the oven to 350 degrees F.
  6. Cook bacon in the oven until not quite crispy, set aside
  7. Peel and slice potatoes, 1/8“
  8. Add a teaspoon of lard to a large frying pan
  9. Add 2 table spoons butter to the pan
  10. Fry potatoes until almost done, just turnng brown
  11. Remove from heat and set aside
  12. Scramble eggs, set aside
  13. GRAVY
  14. Preheat large heavy bottom pot.
  15. Add the sausage and cook, stirring and breaking the meat up into bite-size pieces,
  16. Continues cook while stirring until the sausage is browned, about 8 minutes.
  17. May need to add oil if the meat is lean
  18. Deglaze with white wine.
  19. Stir in spices.
  20. Sprinkle the flour over the cooked sausage, and stir until it is completely absorbed.
  21. Deglaze with white wine
  22. Add 2 cups milk and stir until it starts to thicken.
  23. Stir in the remaining 2 cups milk, bring to a simmer stiring until the sauce is desired thickness.
  24. Add 1/4 cup Parsely
  25. Remove from theat and let cool.
  26. ASSEMBLE
  27. Spray a 9 X 13 backing dish
  28. Spread about 4 tablespoons of the sauce (without big pieces of sausage) over the bottom.
  29. Layer potatoes slices over the top
  30. Layer of cheese
  31. Spread layer of sausage.
  32. Add layer of potatoes
  33. Spread a laver of scrambled eggs
  34. Sprinkle with cheese
  35. Add layer of pototoes
  36. Cover with bacon
  37. Add layer of potatoes
  38. Add layer of Mozzarella and Parmesan cheese
  39. Cover with foil
  40. Refrigerate over night
  41. FINAL
  42. Preheat the oven to 350 degrees F.
  43. Bake until the cheese is melted and bubbly, about 45 minutes.
  44. Uncover the dish, and continue to bake until slightly browned, 10 to 15 minutes.
  45. Top with the parsley and a sprinkle of black pepper.
  46. Let sit for at least 15 minutes, then slice and serve.
