Country Breakfast Skillet

Ingredients

  • 6 slices bacon
  • 6 cups frozen cubed hash brown potatoes
  • 3/4 cup chopped green pepper
  • 3/4 cup chopped onion
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 eggs
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Cook bacon in large skillet until crisp.
  2. Remove bacon, crumble, and set aside.
  3. Drain drippings, reserving 2 tablespoons in skillet.
  4. Add potatoes, green peppers, onion, salt, and pepper to drippings.
  5. Cook and stir for 2 minutes.
  6. Cover and cook, stirring occasionally, until potatoes are brown and tender (about 15 minutes).
  7. Make 6 wells in potatoes and break one egg into each well.
  8. Cover and cook on low heat 8-10 minutes, or until eggs are completely set.
  9. Sprinkle with cheese and bacon.
