Breakfast Casserole
Ingredients
- 6 slices white bread cubed
- 2 cups frozen tater tots
- 1 pound of mild sausage cooked, crumbled and drained
- 1/2 onion, diced (sauteed with sausage)
- 1 tomato, sliced
- 8 ounces package of sliced mushrooms sauteed
- 3 cups of grated extra-sharp Cheddar cheese
- 8 Eggs
- 1 -1/2 cups of milk
- 1 cup heavy cream or evaporated skim milk
- 1 teaspoons prepared yellow mustard mustard
- 1/2 teaspoon salt and pepper
Instructions
- Spray a 9?13 casserole dish with non-stick cooking spray. Place the tater tots in the casserole followed by cubed bread crumbs. Evenly distribute the sausage/onion mixture over the bread cubes followed by sauteed mushrooms. Sprinkle evenly with cheese. In a medium bowl, combine the eggs, cream, milk, mustard, salt, pepper and mix well. Pour the egg mixture over the casserole. Line the top of the casserole with sliced tomatoes. Cover with plastic wrap and refrigerate overnight. The next morning, remove the casserole from the refrigerator and preheat oven to 350 degrees. Remove the plastic wrap and bake casserole for 1 hour.
