Breakfast Energy Bars

Ingredients

  • 1 cup raw almonds
  • 1 cup raw sunflower seeds
  • 1 cup raw pumpkin seeds
  • 1 cup raw steel cut oats
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon pumpkin pie spice (cinnamon nutmeg, cloves and allspice)
  • 1/2 teaspoon sea salt
  • 1/2 cup raisins or dried currants
  • 1/4 cup Almond Butter
  • 1/4 cup organic honey
  • 1/4 cup unsweetened applesauce
  • 3 tablespoons ground flax seed

Instructions

  1. Line muffin pan with paper cups. Process nuts, oats and spices (NOT the flax seed) on high until finely chopped, roughly 1 minute. Pour in large bowl. Add raisins or currants and mix well.
  2. In a small sauce pan, whisk almond butter, applesauce and honey until the mixture melts and is smooth. Remove from heat and stir in flax seed. Pour mixture over dry ingredients and mix well until even. Use an ice cream scoop to put one scoop of mixture in each paper cup. Use bottom of a cup to press down firmly. Set in the freezer for 30 minutes and store in an airtight container.
