Egg Salad Wrap

Ingredients

  • 2 Eggs hard-boiled, yolk removed from one
  • 1/4 cup low-fat cottage cheese
  • 1 whole wheat tortilla
  • 1 tbsp dijon mustard
  • 1/2 tsp dried dill or tarragon optional
  • salt and pepper to taste
  • 2 cups mixed greens
  • 1 Roma Tomatoes sliced
  • 2 cups mixed greens
  • 1 Roma Tomatoes sliced
  • 1 tsp balsamic vinegar

Instructions

  1. Chop up eggs and mix with cottage cheese, mustard, salt, pepper and herbs. Place onto tortilla and wrap up.
  2. Toss mixed greens, tomato and balsamic vinegar.
