Egg Salad Wrap
Ingredients
- 2 Eggs hard-boiled, yolk removed from one
- 1/4 cup low-fat cottage cheese
- 1 whole wheat tortilla
- 1 tbsp dijon mustard
- 1/2 tsp dried dill or tarragon optional
- salt and pepper to taste
- 2 cups mixed greens
- 1 Roma Tomatoes sliced
- 2 cups mixed greens
- 1 Roma Tomatoes sliced
- 1 tsp balsamic vinegar
Instructions
- Chop up eggs and mix with cottage cheese, mustard, salt, pepper and herbs. Place onto tortilla and wrap up.
- Toss mixed greens, tomato and balsamic vinegar.
